The Day I Fell in Love with Pão de Queijo: Brazilian Cheese bread

I have been asked many times why I started baking pão de queijo.

My beautiful  Step-Mother is Brazilian so Brazilian cuisine has featured in my life for many years.  My first visit to Rio was truly an u forgettable one, not just for the absolute beauty of the city but for the way it introduced me to new flavours, traditions and way of life.

Pão de queijo are Brazilian cheese breads, typically made with tapioca flour (which makes them gluten-free), cheese, eggs, and milk. They have a chewy, slightly crispy exterior and a soft, gooey inside. They are a popular snack or breakfast food in Brazil and are often served warm.

Pão de queijo are enjoyed by many worldwide for its unique texture and delicious, cheesy flavour.

I can still remember the moment I first tasted pão de queijo…

A churrascaria is a traditional Brazilian steakhouse restaurant, where various cuts of meat are grilled on large skewers and served straight to your table.  It’s a truly unique dining experience that we were about to enjoy for the first time.

However, churrascarias aren’t just about the meat. They are also about the sides.  The pão de queijo arrived to the table.  They were one of the most delicious things I had ever tasted.

It’s been over 20 years since I first tasted pão de queijo.

A couple of years ago, life gave me an incredible opportunity.  I had the privilege of being shown how to make pão de queijo by two very special and talented Brazilian relations.  Not only did they entrust me with their exceptional recipe but showed me the meticulous method they followed to ensure these would be the best pão de queijo out there.

While most recipes use cheddar cheese, this unique recipe, uses Gruyère, a Swiss cheese known for its sweetness and distinct flavour. The moment I tasted that version, I knew I had to bring their recipe from their restaurant in Lausanne to my home in London.
